Dan is proud to introduce BREADUCATION! Dan is ready to offer his extensive knowledge of sourdough process and practice to you, in the form of experiential classes, led by Dan himself.
Participants are required to wear close-toed, non-slip shoes to all DTB Breaducation events. Hair restraints are required (hats, hair tie, etc) and hair nets will be provided for those that do not bring them. Beard nets are a requirement, and will be provided.
Classes are offered on a first come, first served basis, with no reservations permitted.
Cancellation policy is 1 full week before the date of class, for a full refund. After that, the class may be transferred to a future class date, once.
Cell phone usage is not permitted during learning hours. There will be short breaks provided, so you may use your phone.
Breaducation classes are for adults, 18 and over.

Build on your skills learned during Dan's Sourdough Basics class!
Participants will get to make their own batch of dough from start to finish.
During day one, we will be focusing on mixing two high-hydration doughs; Country Sour, and your choice of Organic Walnut, or Olive Polenta. Guests will learn how to incorporate inclusions, just like we do in production. Each step, from portioning to shaping and proofing will be well described, and you will finish each day with a wealth of knowledge, delivered in a conversational style.
Day two is focused on baking the breads made the day before. Each participant will be scoring their own loaves! Dan will also be instructing participants on how to bake with a home oven, using a cast iron dutch oven. We will also be discussing the anatomy of whole grains.
Participants can expect this to be an experiential course, where you get your hands messy! It is recommended that participants take Dan's Basic course before taking his Advanced course, unless you already possess some skill level.
Each day includes a light meal at the bakery. Participants receive 2 loaves of each type of bread to take home with them! (Four loaves total!) Participants also receive a portion of Dan's sourdough leaven.
Participants will receive an bread formula for the loaves made, and basic instructions on the processes that were discussed during the course. Included in this information is where to source grains, and what grains to use for the best result.
This is a two-day class.
