Add to your skills and diversify the knowledge you acquired during Dan's Advanced Sourdough class!

Ancient grains add complexity and nuance to your breads, and are often more nutritious than traditional grains.

During day one, we will be focusing on mixing two types of high-hydration doughs, made with fresh-milled ancient grains; Ohio organic einkorn, and Ohio organic spelt. Milling at home will be discussed in depth, and each grain and it's traits will be well described. Each participant will mill each type of whole grain they'll be using during the class. Each step will be well described, from portioning, to shaping, to scoring, and participants will finish each day with a wealth of knowledge, delivered in a conversational style.

Day two is focused on baking the breads made the day before! We will also be discussing the anatomy of whole grains.

Participants can expect this to be an experiential course, where you get your hands messy!

Each day includes a light meal at the bakery. Participants receive 2 loaves of each type of bread to take home with them! (Four loaves total!)Participants also receive a portion of Dan's sourdough leaven.

Participants will receive an bread formula for the loaves made, and basic instructions on the processes that were discussed during the course. Included in this information is where to source grains, and what grains to use for the best result.

This is a two-day class.
