BREADUCATION!

Dan is proud to introduce BREADUCATION! Dan is ready to offer his extensive knowledge of sourdough process and practice to you, in the form of experiential classes, led by Dan himself. 

Participants are required to wear close-toed, non-slip shoes to all DTB Breaducation events. Hair restraints are required (hats, hair tie, etc) and hair nets will be provided for those that do not bring them. Beard nets are a requirement, and will be provided.

Classes are offered on a first come, first served basis, with no reservations permitted.

Cancellation policy is 1 full week before the date of class, for a full refund. After that, the class may be transferred to a future class date, once.

Cell phone usage is not permitted during learning hours. There will be short breaks provided, so you may use your phone.

Breaducation classes are for adults, 18 and over.

Ever wanted to learn the secrets to Dan’s amazing sourdough bread? Now’s your chance! Dan is now hosting amazing, hands-on baking classes, hosted right in his bakery in Grandview, Ohio. Each class is fast paced, experiential, and a total blast! Dan’s class size is limited to four individuals per class, to encourage active, engaged learning, and direct connection between Dan and his students.

You will walk away with a brand new knowledge of how to make the best sourdough breads in your own home!

In his Anything But Basic Sourdough Bread Course, Dan will guide you through the entire process of baking his flagship bread, Country, known for it’s open crumb structure, creamy texture, and deeply caramelized crust.

On day one, Dan will discuss in detail the many aspects of mixing, shaping, and baking, including dough hydration, flour blends, and whole grains. Participants will be hand-mixing their own batches of dough, under Dan’s direct supervision! Dan will discuss the basics of whole grain and white flours, how to maintain a sourdough leaven (you’ll be feeding your own culture, and get to take it home to use however you’d like!) We will dive deep into how to shape the challenging, high-hydration breads Dan is known for.

Day two is focused on baking the breads made the day before. Dan will be instructing participants on how to bake breads with our stone-lined, digital Italian deck oven, as well as how to bake with a home oven, using a cast iron Dutch Oven, or firebrick- lined home oven. Participants will get to use one of our Staub Dutch ovens during the class, to bake a loaf of their bread. Each participant will be scoring their own loaves before Dan loads them into the oven, and we watch the baking process happen in real time.

Participants can expect this to be an experiential course, where you get your hands messy! Dan will provide you with an apron. Hair nets are required attire, and are provided (but you can wear a hat!)

This course will give you a great basis of knowledge on how to bake your own amazing sourdough bread at home.

Each day includes a light meal at the bakery, prepared by Dan. Each participant receive 4-6 loaves to take home with them! Participants also receive a portion of Dan's sourdough leaven.

Class timeline is 9 am - 2 pm January 28th, and 9 am - 1 pm January 29th.

Participants will receive an bread formula for the loaves made, and basic instructions on the processes that were discussed during the course. Included in this information is where to source grains, and what grains to use for the best result.
